Over Saffire Freycinet

Saffire is spectaculair gelegen tegen een heuvel en aan een baai met glashelder water. Hier is een architect met visie aan het werk geweest, dat is in het hele hotel te zien. De kamers zijn ingericht met een eclectische mix van traditionele en eigentijdse voorwerpen. Privacy heeft een belangrijke rol gespeeld bij het ontwerp van de kamers. U heeft er onovertroffen uitzicht op de bergen, de zee en de witte stranden. U bent hier om tot rust te komen; gaat u naar de spa voor een behandeling of naar de gym.

De oostkust van Tasmanië heeft een klimaat dat op dat van Zuid-Frankrijk lijkt. Het produceert fantastische wijnen zoals chardonnay en pinot noir. De vis, de oesters en de mosselen komt uit het kraakheldere water van de oceaan, elke dag vers. Dit is een oord voor fijnproevers op alle gebied, u komt hier als herboren vandaan.

Freycinet is een van de mooiste nationale parken van Australië en ligt aan de oostkust van Tasmanië. U vindt hier prachtige bergen en stranden. Tevens vindt u er baaien met glashelder water, verlaten stranden en een heerlijk klimaat. Hier heeft u dikwijls de natuur voor uzelf. Op culinair gebied bent u hier ook aan het goede adres: alles is vers!

It was a return visit in this occasion and I couldn't speak more highly of the service, a special call out to James the hospitality manager, amazing! See you again for sure... Make sure (weather permitting) you do the oyster shucking experience!


I'm writing this looking out over the bay towards the beautiful Hazards range. The view is incomparable. Wish 3 hours left to kill before departure to Launceston for a late flight I face the difficult choice of relaxing (for the first time in an action packed weekend) with a book and another glass of Tasmanian Chardonnay or a walk along the deserted white sandy beach. Tough choices! From our arrival at dinner time on Friday we have been so well looked after. Sure you would expect that from a hotel of this price but there is nothing overlooked here and everything is done supremely well. The food is exceptional. Sensible small portions allow you to put away a 6 course tasting menu with ease after after a full-on breakfast and lunch. I loved the style of the lunch with the help yourself salad bar (no ordinary salads!) and had no problem eating it on my lap facing the glorious view. A beautiful sunny Saturday allowed to enjoy a BBQ lunch on the terrace. We were asked in advance what we might like to do and our activities were scheduled for us. We started with a self guided 12km wineglass bay/hazards circuit walk which earned us the right to a large lunch and a couple of glasses of rose. A quick power nap before visiting the Tasmanian devil enclosure (a delightful 5 acre retirement home) and then a massage leading into mixology class. Having learned our lesson from overeating on day 1, a more moderate breakfast of fruit and chia pudding was followed by a wonderful tour of the local oyster farm. Don't bother if you don't like oysters ..... but if you do, you get to see the whole process from baby to adult, learn to shuck them and then of course consume them with white table cloth and champagne while standing knee deep in water. Excellent and a huge thanks to Declan our guide. Fabulous staff all round with particular mention to Declan, Cecelia my masseuse (best and firmest massage ever!), the fantastic sommeliers who indulged us by providing tastings of everything. Can't wait to go back - even at the price!


Definition: Saffirezed Adjective: The state of being all consumed and embodied with too good a thing This new word was born as a result of the very first Sparkling Weekend at Saffire hosted in collaboration with Tyson Stelzer and Jodie. The weekend was graced with terrific weather, sighting of whales from Palate Restaurant (twice in one day), Justin King (GM) does indeed train them superbly well. The first night was a cocktail style dinner with brilliant selection of canapés and a subtle live band playing throughout the evening whilst magnificent backdrop is the all enthralling Hazards. At one point in the night I wished I had more hands to hold all the different wines that was coming. Saffire is always ever generous with their food and wine. At the end of the night I was so full that I felt like I had been to a buffet instead of snacking on beautifully presented delicious hor d'œuvre. It was a brilliant set up for the guests and winemakers to get to know each other. The second night was a more formal affair, with a six course degustation paired with matching wines. On both nights there were prizes to be won for the discerning guests. The masterclass was my personal highlight. We sampled 6 Sparkling / Champagne which included vintage Dom and Krug. Unlike at most tastings which we usually only get a glass of the super premiums, at Saffire the top-ups are free flowing. Todd Adams - executive chef. He has taken the food yet to another level. I didn't know it was even possible to do that as it was already honestly outstanding 6 months ago when we had tried it. He even managed to convince his fellow truffle farm friends to forage before the season officially started just for this Sparkling Wine weekend. I appreciated the great restraint he had to take at creating dishes to showcase the individual wines selected by Tyson whilst maintaining the development of the degustation journey. Hugh Whitehouse - executive food and beverage manager at federal group tourism , he consults at multiple establishment under the federal group umbrella. Ever humble and always giving credits to others. Brogan - leaves us lovely messages each night when we return to the immaculate suite and the bath is magically drawn with the works, rose petals and beautiful smelling bath salts. Thank you to Justin, Mel, Shantell, Aiden, Russell, Ross, Sharon, Jo, Renee, Ashley and Kate. It's like visiting long lost friends. David, you are full of vim and vigor, it was indeed good to have met you. Alas I've officially returned to the real world this evening. I'll have to prepare my own breakfast and pour my own tea in the morning. *sigh*

"Truly Exceptional Staff Complement the Architecture, Location & Views"

We too took advantage of the Tassie Residents Winter 'Special' & like the majority of previous 5 star reviews were truly impressed. As has been written in many previous posts, notwithstanding the outstanding architecture, location, views, good food & wine, it is the Staff that make Saffire so special. The ability of the management to select & train so well produces amazing results. The service delivery is measured & superb, but not 'in your face'. We enjoyed the degustation dinner with paired wines on both nights & were not disappointed. The 4 salad lunch & 2 hot options were quite innovative & very tasty. The weather was so good we had lunch outside on the balcony. We also appreciated the upgrade from Luxury to a Signature Suite. The Reception process on arrival by car was memorable too - valet parking, luggage delivered to the suite, a drink at the viewing platform with its amazing vista. Just ensure you identify what you want & do not want to be removed from your car boot, or you may get a surprise! Also take care of the relatively shallow ornamental water feature on the top level - one of the guests returning with us from a hilarious & enjoyable Oyster Farm visit managed to step into it, much to the amusement of the rest of us (no injury sustained) In summary, the tariff may be quite high, but after our first visit, certainly think it is worth it. One needs to spend a minimum of 2 nights to fully experience what Saffire has to offer. The Signature Suite was very comfortable & well furnished. The only slight negative is related to reading at night. The only area with bright enough light in the lounge area is at the desk. The lounge chair arms are so high the side lights cannot be used & the power of the standard lamp is quite weak. Also, the bed reading lights illuminate the niches next to the bed only - ideally they should be angled at 45 degrees towards the bed. Not a big issue & in no way detracts from the outstanding overall experience. Will definitely return to Saffire at a later date, even if there is no Tassie resident special - it is a truly excellent facility.

Not many properties can claim to execute what is promised. Saffire has essentially one upped what the most discerning traveler would require in a luxury property. The positive influence Justin K the GM and Todd A. Executive Chef's influences have on the makeup of the staff and their degree of genuine friendliness and wanting to be there for you is nothing short of amazing.The property's amenities, setting, food and beverage and on and off site activities are indeed world class as other reviewers have suggested. (no pool and small work out room-but who cares!)Think of Saffire Freycinet as a product of an Amangiri resort meeting Southern Ocean Lodge and SF would be the product of their "union". One of our most pleasurable experiences of our five week sojourn in Australia. A special thanks to Justin K. and Todd A.
